Potato Croquettes in Bacon Recipe
Ingredients
3-4 cups seasoned mashed potatoes
1/4 cup finely chopped pimento
1 tablespoon grated Parmesan cheese, Dash cayenne
1 egg, beaten
1 cup dry bread crumbs
8 bacon slices, halved lengthwise, Toothpicks
Directions
Combine first 5 ingredients, and form into 16 small log-shaped croquettes.
Roll in crumbs; then wrap in bacon slices.
Secure with toothpicks.
Place in shallow pan; refrigerate until needed.
Bake at 425°F. until bacon is crisp, turning once during baking.
Allow 15-20 minutes.
Serve with steak.
