Recipe Story

This was one of my grandmother's recipes and it was my favorite dish growing up.

Ingredients

 
6 strips of bacon cut into 1 inch pieces
 
1 medium size yellow onion finely chopped
 
3-6 potatoes cut into chunks
 
1 can cream style corn
 
1 can evaporated milk
 
2 cups water
 
salt, pepper
 
Tabasco to taste
 
1TB freshly chopped parsley

Directions

Cut the bacon into 1 inch size pieces and cook in a large stock pot. Once the bacon starts to fry and becomes crispy, remove the bacon leaving the grease behind. Add the onions to the bacon grease. Cook for a few minutes till the onions become clear. Add the water and potatoes and boil for 5-10 minutes. Reduce heat to simmer, add the corn, evaporated milk, parsley and bacon that was set aside. Let simmer for 10 minutes. Season to taste.
