Potato-Coated Fish Recipe

Ingredients
4 fresh or frozen pan-dressed catfish or other fish (about 1/2 pound each)
1 beaten egg
1 cup instant mashed potato flakes
1 envelope onion salad dressing mix Salad oil
Directions
Thaw frozen fish.
Season fish with salt and pepper.
Combine egg and 1 tablespoon water.
Combine potato flakes and dressing mix.
Dip fish into egg mixture, then roll in potato mixture; repeat.
Brown fish in hot salad oil on one side for 4 to 5 minutes.
Turn carefully; brown on second side till fish is brown and flakes easily when tested with a fork, 4 to 5 minutes.
Drain on paper toweling.
Season fish with salt and pepper.
