Vegetarian Potato Soup Recipe
Ingredients
| Oil | 1/4 Cup (16 tbs) | |
| Onion | 1 | |
| Carrots | 3 | |
| Stalk celery1 , chopped | ||
| Potatoes - 7-8 , diced (wash well and leave skins on) | ||
| Stock or water - 1 quart | ||
| Vegetable salt - 1 teaspoon | ||
| Dry milk powder - 1 1/2 cups (non-instant) | ||
| Milk | 1/2 Cup (16 tbs) | |
Directions
MAKING
1.In a pan, heat oil and cook onions, celery, carrots and potatoes in it.
2.Add stock and vegetable salt and let the mixture boil.
3.Once done allow it to simmer for 1 hour or pressure cook for 15 minutes.
4.Take 2 cups of soup liquid and stir in dry milk powder and 1/2 cup milk to it.
5.Mix well until dissolved.
6.Put the mixture in the soup and cook for 5 minutes.
SERVING
7.Serve potato soup with grated Cheddar Cheese.
