Ingredients

 Oil1/4 Cup (16 tbs)
 Onion1
 Carrots3
 Stalk celery1 , chopped
 Potatoes - 7-8 , diced (wash well and leave skins on)
 Stock or water - 1 quart
 Vegetable salt - 1 teaspoon
 Dry milk powder - 1 1/2 cups (non-instant)
 Milk1/2 Cup (16 tbs)

Directions

MAKING
1.In a pan, heat oil and cook onions, celery, carrots and potatoes in it.
2.Add stock and vegetable salt and let the mixture boil.
3.Once done allow it to simmer for 1 hour or pressure cook for 15 minutes.
4.Take 2 cups of soup liquid and stir in dry milk powder and 1/2 cup milk to it.
5.Mix well until dissolved.
6.Put the mixture in the soup and cook for 5 minutes.

SERVING
7.Serve potato soup with grated Cheddar Cheese.
