Potato Skins Recipe
Ingredients
5 to 6 medium-sized potatoes
3 tbsp (50 mL) butter
1/2 tsp (2 mL) celery salt
1/2 tsp (2 mL) savory
1/2 cup (125 mL) grated cheese of your choice
Directions
€¢ Wash potatoes. Make 3 to 4 gashes in each one with the point of a knife.
€¢ Place in a circle on a microwave rack.
€¢ Microwave 10 to 12 minutes at HIGH, turning each potato over after 5 minutes of cooking. Let stand 10 minutes after the cooking period.
€¢ Cut each potato in half lengthwise.
€¢ For smaller skins, cut each half potato lengthwise.
€¢ Scoop out the potato pulp*.
€¢ Place the skins on a round 9-inch (23 cm) pie plate (Pyrex or Corning).
€¢ Place the butter in a small microwave-safe bowl. Melt 2 minutes at HIGH.
€¢ Add the remaining ingredients except the cheese.
€¢ Stir until well mixed.
€¢ Brush the inside of each potato skin with this mixture.
€¢ Sprinkle each piece of potato lightly with cheese.
€¢ Sprinkle the whole with a bit of paprika.
€¢ Microwave, uncovered, 10 to 12 minutes at HIGH. The skins will be crispy.
