Large potatoes - 3
Scallions - 2
Light or heavy cream - 1 1/4 cups
Chives - 3 tbsp, coarsely chopped
Salt
Freshly ground black pepper
Directions
GETTING READY
1 Peel the potatoes.
2 Cut them into small pieces.
3 Remove the outer layer of the scallions.
4 Slice the bulbs into thin rings.
MAKING
5 In a saucepan, put the potatoes with 2 1/4 cups water and 1 tsp salt.
6 Bring to a boil and cover.
7 Simmer over very low heat for 15-20 minutes or until the potatoes are tender and have absorbed all the water.
8 Use a fork to break up the potatoes into very small pieces.
9 Let cool.
10 Pour the cream over the potatoes.
11 Combine the scallion rings with potatoes and cream along with plenty of freshly ground black pepper and a little more salt to taste.
