Potato Salad with Caraway Recipe
Ingredients
| Potatoes- 4 medium no-'s, peeled, cut into ¼ inch dice, boiled and dried | ||
| Vegetable oil | 1/2 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon, strained | |
| Harissa- 1 teaspoon, thinned with 1 tablespoon water | ||
| Caraway seed powder- 1 teaspoon | ||
| Salt | 1 1/2 Teaspoon | |
Directions
MAKING
1. In a heavy bottomed large skillet, heat oil till warm.
2. Add thinned harissa, caraway powder, salt and lemon juice and cook on a medium flame till it reduces, while stirring continuously.
3. Remove off flame, add boiled potatoes and toss gently till evenly coated.
SERVING
4. Transfer on to a serving bowl and serve Salatit Batata (Potato Salad with caraway) warm, as an accompaniment to Couscous.
