Potato Salad Vinaigrette Recipe

Ingredients

 
1 1/2 pounds new potatoes, cut in quarters or halves, depending on size and taste
 
2 tablespoons red wine vinegar
 
1 tablespoon grainy Dijon mustard
 
3 tablespoons olive oil
 
3 scallions, chopped
 
3 tablespoons finely chopped fresh parsley
 
2 tablespoons finely chopped fresh dill
 
Salt and pepper

Directions

1. Place the potatoes in a large stock-pot and cover with cold water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. Drain.
2. While the potatoes are cooking, combine the vinegar and mustard in a large bowl, then whisk in the olive oil.
3. Add the drained potatoes to vinaigrette and mix gently but thoroughly. Set aside to cool to room temperature.
4. Before serving, mix in scallions, parsley, and dill, and salt and pepper to taste.
