 Cold potato - 1 lb cooked, new ones if possible or waxy old potatoes
 Chives - 1 tbs, chopped or finely chopped raw onion
 Parsley, chervil, mint, savory or other green herbs - 1 tbs, chopped

Directions

GETTING READY
1. Dice vegetables.
2. Chop chives or onions.

MAKING
3. In a bowl add vegetables, chives and mix with dressing.
4. Pile into a dish.

SERVING
5. Sprinkle chopped herbs over it.
