Ingredients

 450 g / 1 lb waxy potatoes, cooked, peeled and sliced
 120 ml / 4 fl oz mayonnaise
 Lemon juice1 Tablespoon
 1 tablespoon olive or good vegetable oil
 Chives2 Tablespoon, chopped
 4 tablespoons finely chopped leeks
 Salt To Taste
 Pepper To Taste

Directions

GETTING READY
1) Combine mayonnaise, lemon juice, 1 tbsp of chives along with salt and pepper.

MAKING
2) In a mixing bowl, arrange the potato slices.
3) Pour the mayonnaise mixture over the potatoes and toss well.
4) In a serving dish, transfer the potato mixture and sprinkle with remaining chives. 5) Around the bowl edges, scatter some leeks.
6) Cover the dish and chill for 30 minutes.

SERVING
7) Serve the chilled salad as appetizer.
