Potato Salad Recipe
Ingredients
| 450 g / 1 lb waxy potatoes, cooked, peeled and sliced | ||
| 120 ml / 4 fl oz mayonnaise | ||
| Lemon juice | 1 Tablespoon | |
| 1 tablespoon olive or good vegetable oil | ||
| Chives | 2 Tablespoon, chopped | |
| 4 tablespoons finely chopped leeks | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1) Combine mayonnaise, lemon juice, 1 tbsp of chives along with salt and pepper.
MAKING
2) In a mixing bowl, arrange the potato slices.
3) Pour the mayonnaise mixture over the potatoes and toss well.
4) In a serving dish, transfer the potato mixture and sprinkle with remaining chives. 5) Around the bowl edges, scatter some leeks.
6) Cover the dish and chill for 30 minutes.
SERVING
7) Serve the chilled salad as appetizer.
