Ingredients

 1 lb. cooked potatoes
 Onion1 Tablespoon, finley chopped
 Seasoning
 Mayonnaise4 Tablespoon
 Little single cream or top of the milk
 Lettuce strips
 Pepper red1 To taste (Garnish)
 Small diamonds
 Green pepper1 To taste (Garnish)

Directions

Dice the potatoes, add the onion and seasoning.
Thin the mayonnaise with a little single cream or top of the milk and add to the potato mixture.
With a fork toss the mixture until the potatoes are well coated with the mayonnaise.
Serve on a bed of lettuce and garnish with strips of red pepper and diamonds of green pepper.
