Ingredients

 
2 lb. small potatoes
 
Salt and pepper
 
3 large onions
 
1 sprig thyme
 
1 oz. fat
 
1 bay leaf
 
2 Tbs. flour
 
2 sprigs parsley
 
1 pt. water or stock

Directions

Peel the potatoes and onions and cut them in quarters.
Heat the fat in a saucepan and stir in the flour.
Stir and cook until it begins to turn yellow.
Add the stock and stir until it boils.
Add the rest of the ingredients, cover and boil gently for 3/4 hour or until the potatoes are tender.
