Potato Pepperoni Supper Recipe
Ingredients
| Vegetable caoking spray | ||
| Butter/Margarine | 4 Tablespoon | |
| 5 large potatoes , unpeeled and cut into 1/8 inch-thick slices | ||
| Onion | 1 Small, diced | |
| Salt | 1/2 Teaspoon | |
| 1 8-ounce package mozzarella cheese, shredded | ||
| Tomato sauce | 1 8 Ounce | |
| 1 3 1/2-ounce package sliced pepperoni | ||
| 2 large tomatoes, cut into thin wedges | ||
Directions
1. Spray 12-inch skillet with cooking spray. Over medium heat, in skillet, melt butter.
2. Arrange potatoes and onion on bottom and slightly up side of skillet; sprinkle with salt. Cover skillet; over medium-low heat, cook until potatoes are tender, about 20 minutes.
3. Sprinkle potatoes with cheese; top with half of tomato sauce; arrange pepperoni and tomatoes over sauce; top with remaining sauce. Cover; cook until tomatoes are heated through.
