Potato Pancakes With Sour Cream And Chives Recipe
Ingredients
| 2 potatoes, scrubbed, cut into pieces (do not peel) | ||
| 1 small onion, peeled and cut in quarters | ||
| Egg | 1 , beaten | |
| Flour | 2 Tablespoon | |
| Frying Oil | 2 Cup (16 tbs) (For frying) | |
| Sour cream | 1 Cup (16 tbs) | |
| Chives | 1/4 Cup (16 tbs), chopped | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Place the potatoes and onion in blender or food processor, and process until potatoes are finely chopped.
Place in a bowl and spoon off any liquid.
Add the egg, flour, salt, and pepper and mix well.
In an 8-inch frying pan or skillet, place oil to come 1/4 inch up sides of pan.
When hot, drop the potato mixture in with a tablespoon.
Flatten each with the back of the spoon.
Fry 4 at a time.
Cook 2-3 minutes on one side until brown, turn once, and brown other side, 2-3 minutes.
Mix the sour cream and chives together in a bowl and spoon over the pancakes at the table
