Healthy Potato Pancakes Recipe
Ingredients
| 6 large potatoes, finely grated into bowl of water | ||
| 3 eggs, lightly beaten | ||
| 1/4 cup soy grits | ||
| Parsley | 3 Tablespoon, chopped | |
| Onions | 2 Small, finely grated | |
| Tamari soy sauce | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Vegetable oil | 2 Cup (16 tbs) (For frying) | |
| Applesauce, cottage cheese, and plain yogurt | ||
Directions
1. Squeeze the potatoes between the hands until dry. This removes the excess liquid and surface starch.
2. Combine the potatoes with the eggs, grits, parsley, onions, tamari, and salt and mix well.
3. Pour oil into a heavy skillet to a depth of 1/4 inch. Heat the oil. Drop the potato mixture by ladles into the hot oil and fry until browned; turn to brown the second side. Drain on paper towels.
