Potato Onion Omelette Recipe
Ingredients
| Butter | 1 Teaspoon | |
| Salt pork | 1/2 Cup (16 tbs), lightly packed | |
| Onion | 1 Large, chopped | |
| 1 1/2 cups cubed, cooked, cold potatoes | ||
| Water | 2 Teaspoon | |
| Eggs | 4 , beaten | |
| Ground black pepper | 1 To taste | |
| Salt | To Taste | |
Directions
1. Melt the butter in an omelet pan, add the salt pork and cook over medium heat, stirring occasionally, until the butter and pork begin to brown. Add the onion and continue cooking until the onion is almost tender.
2. Add the potatoes, increase the heat slightly and saute until the pork, onion and potatoes have browned. Drain off the fat.
3. Add the water to the eggs, season to taste with salt and pepper and pour over the mixture. Continue as for a plain omelet. Work rapidly, as the cooking time is one minute.
