1.Preheat oven to 375 degrees F.
2. Prepare the potaotes according to instructions given on package. Similarly, make the sauce mix too. Add in the scallions and keep aside.
3.Take a 10 inch non stick skillet with an oven safe handle or a removable one.
4.Put some margarine on the skillet and melt ot over medium heat.
5.Pour half the eggs into skillet and cook over medium heat. The bottom gets cooked in over a minute.
6. Now, spread the potato-scallion mixture on the eggs. Cover the potato layer with remaining eggs.
7.Place skillet in the oven and bake for 15 minutes until eggs get set.
8.Take a serving dish and invert omelet onto this.
