Potato Omelette Recipe
My longing for potato omelet strengthened during high school days. If you have a lot of vegetable on hand then potato omelet is the recipe you should opt for. This potato omelet recipe is sure to sweep you off your feet!
Ingredients
2 tbsp (30 ml) butter
1 tsp (5 ml) vegetable oil
2 potatoes, peeled and sliced
2 tbsp (30 ml) chopped onion
1 tbsp (15 ml) chopped fresh parsley
5 eggs
Pinch nutmeg
Salt and pepper
Directions
Heat 1 tbsp (15 ml) butter and oil in small frying pan.
When hot, add potatoes and season well.
Cook 2 to 3 minutes on each side over medium heat.
Stir once during cooking process.
Sprinkle nutmeg over potatoes and mix; cover and continue cooking 8 to 10 minutes.
Mix well; add onion and parsley.
Cook, uncovered, 3 to 4 minutes.
Meanwhile, break eggs into bowl and beat with fork; season well.
Heat remaining butter in nonstick frying pan or omelet pan.
When hot, pour in eggs and cook 1 minute over high heat.
Stir eggs rapidly and add potatoes.
Roll omelet (see technique) and continue cooking 1 minute.
