Ingredients

 
1 cup grated potato
 
1 cup grated coconut
 
3/4 cup sugar
 
Cashew Nuts
 
Cardamom Powder
 
Ghee
 
Yellow color

Directions

Steam cook the potatoes and peel the outer portion.
Grate the potatoes.
Take a pan and pour some water.
Add 3/4 cup sugar and little color. Mix it properly.
When the sugar is melted, you can add grated potatoes and coconut.
Stir continuously and add cardamom powder.
Mix ghee and cook for 5-8 minutes.
When the dough is getting dry, you can transfer the halwa in a bowl.
Sprinkle cashews on the top.

This rather uncommon but authentic and traditional halwa is commonly prepared by south Indian Hindus during fasts and for puja’s. This is a really simple recipe, using ordinary boiled potatoes. You can substitute them with sweet potatoes if you like. This is definitely a recipe that you must have in your repertoire of halwa recipes and foods to be made for fasts.
