Ingredients
1/3 cup sifted all-purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon white pepper
1/2 cup fine dry white bread crumbs, with crusts removed
1 tablespoon cold butter
1/4 cup grated potato
1 tablespoon minced onion
1 egg, lightly beaten
Directions
Place in a bowl and stir together the flour, baking powder, salt, and pepper.
Add the bread crumbs and stir well.
Cut or rub in the butter until the mixture resembles coarse meal.
Grate 1/4 cup raw potato into a tea towel, working quickly so that the potato does not have time to brown.
Squeeze potatoes in the tea towel to remove any excess moisture.
Stir the potatoes and minced onions into the bread-crumb mixture.
Add the egg; lightly mix all together.
Stop mixing as soon as the dumpling dough holds together.
Form dough into 8 dumplings.
Slide dumplings into gently boiling salted water.
Simmer about 12 to 15 minutes, until dumplings are cooked through.
Take dumplings out of the water with a slotted spoon and drain briefly.
