Potato Curry Recipe

Ingredients
| Oil | 1/4 Cup (16 tbs) | |
| Onions | 2 | |
| Garlic | 1 Clove (5gm), crushed | |
| Potatoes | 4 | |
| Turmeric | 1/2 Teaspoon | |
| Cumin | 1/2 Teaspoon | |
| Cinnamon | 1/2 Teaspoon | |
| Cardamom | 1/2 Teaspoon | |
| Black pepper | 1/2 Teaspoon | |
| Ginger | 1/2 Teaspoon | |
| Chili powder | 1/2 Teaspoon | |
| Sugar | 1/2 Teaspoon | |
| Coconut milk | 1 Tablespoon | |
| Water | 1 Cup (16 tbs) | |
| Canned tomatoes | 1 3/4 Cup (16 tbs) | |
| ACCOMPANIMENTS | ||
| Plain yogurt | 1 Cup (16 tbs), mixed | |
| Hard-boiled eggs - 4 , crumbled | ||
| Bananas - 2, peeled and sliced, with a squeeze of lemon juice | ||
| Mango chutney | 5 Tablespoon | |
| Pineapple | 1 Pound | |
| Pappadums - 12 | ||
Directions
MAKING
1 In a pan, heat oil.
2 Add onion and fry until transparent (or microwave on HIGH 2 minutes).
3 Add garlic and potatoes and fry for another 2 minutes.
4 Add the remaining ingredients and bring to a boil.
5 Simmer for 30 minutes or until potato is cooked.
SERVING
6 Serve hot accompanied with your favorite bread or rice.
