 Milk1 Tablespoon
 Butter1 1⁄2 Tablespoon
 Egg yolks2
 Potatoes1 Pound, cooked and mashed
 Freshly ground black pepper1
 Chopped fresh parsley1 Tablespoon
 Egg1 , beaten
 Breadcrumbs1⁄2 Cup (8 tbs)
 Oil2 Cup (32 tbs) (For Frying)


Heat the milk in a pan and add the butter.
Off heat, stir until the butter has melted.
Stir in egg yolks.
Beat in mashed potatoes, pepper and parsley.
Divide into portions and shape into croquettes.
Dip in beaten egg and roll in breadcrumbs.
Deep-fry in hot oil until brown.
Drain on paper before serving.
The croquettes may be kept warm in a low oven or made beforehand and reheated.
