Potato Cakes Alla Calabrese Recipe
Ingredients
| Potatoes | 1 Cup (16 tbs), mashed | |
| All purpose flour | 1 Cup (16 tbs) | |
| Baking powder | 3 Teaspoon | |
| Few parsley sprigs, finely chopped | ||
| Parmesan cheese | 1/2 Cup (16 tbs), grated | |
| 2 eggs, slightly beaten | ||
| Cooking oil | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Mix all ingredients except oil.
Shape into rolls about 3 inches long and 1 inch in diameter.
Fry in 1 inch of hot oil in skillet until golden-brown and done.
Serve hot as a vegetable or as a bread.
