Potato Cabbage Casserole Recipe
How is it that you still haven't tried my recipe for Potato Cabbage Casserole. This recipe is a good way to use Vegetable. I just love Main Dish recipes and this dish is my only favorite amongst them. Stop looking and try this Potato Cabbage Casserole recipe immediately.
Ingredients
6 large potatoes, peeled, boiled
4 tsp butter or margarine
2/3 cup skim milk
2 1/2 cups green cabbage, minced, blanched
2 tsp fresh parsley, chopped
Salt and pepper
1 tbsp vegetable oil
1 cup onion, finely chopped
1 cup aged Cheddar cheese, grated
Directions
Preheat oven to 350 °F (175 °C).
In a blender or bowl, mash potatoes, butter and milk until smooth.
Fold in cabbage, parsley, salt and pepper.
Set aside.
In a frying pan, heat oil.
Cook onion until tender but not browned.
Add to potato mixture.
In a greased 10 cup (2.5 L) baking dish, spread a layer of mashed potatoes.
Cover with half the cheese.
Spread a second layer of mashed potatoes, then remaining cheese.
Cook in oven 30-40 minutes or until cheese turns a nice golden brown color.
