1 lb. potatoes
 
2 oz. chopped watercress
 
2 oz. leek or onion, sliced
 
1 pt. water
 
2 bacon rinds
 
1-2 tsp. salt
 
1/2 oz. fat or dripping
 
Pinch of pepper
 
1/2 pt. milk

Directions

Cook as described for Mixed Vegetable Soup, adding the bacon rinds with the potato, and the watercress with the water.
When the potatoes are tender, rub through a sieve or put in a blender and re heat with the milk.
Taste for seasoning.
