Potato and Vegetable Bake Recipe
Ingredients
| 2 1/2 pounds new red potatoes, diced | ||
| Vegetable | 1 Bag (1kg), frozen | |
| 1 can Healthy Choice Cream of Broccoli with Cheddar and Onion Condensed Soup | ||
| Fat free sour cream | 1/2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Black pepper | 1/8 Teaspoon | |
| Vegetable cooking spray | ||
| 1/4 cup fat free shredded Parmesan cheese | ||
| Chives | 2 Tablespoon, chopped | |
Directions
In large bowl, combine potatoes, vegetable medley, soup, sour cream, salt and pepper; mix well.
Place mixture in 4-quart baking dish sprayed with vegetable cooking spray.
Sprinkle with cheese and chives.
Cover and bake at 400°F 1 hour or until potatoes are tender.
