Ingredients

 2 1/2 pounds new red potatoes, diced
 Vegetable1 Bag (1kg), frozen
 1 can Healthy Choice Cream of Broccoli with Cheddar and Onion Condensed Soup
 Fat free sour cream1/2 Cup (16 tbs)
 Salt1/2 Teaspoon
 Black pepper1/8 Teaspoon
 Vegetable cooking spray
 1/4 cup fat free shredded Parmesan cheese
 Chives2 Tablespoon, chopped

Directions

In large bowl, combine potatoes, vegetable medley, soup, sour cream, salt and pepper; mix well.
Place mixture in 4-quart baking dish sprayed with vegetable cooking spray.
Sprinkle with cheese and chives.
Cover and bake at 400°F 1 hour or until potatoes are tender.
