| Leeks | 3 Cup (16 tbs), washed | |
| Margarine | 1 Tablespoon, reduced | |
| Skim or non fat milk - 4 cups | ||
| Instant chicken broth and seasoning mix - 2 packets | ||
| Instant potato flakes | 11/2 Ounce, uncooked | |
Directions
MAKING
1.Take a 3 quart microwavable casserole and add in margarine and leeks. Mix well and microwave covered for 5 minutes on high 100%. Stir every 3 minutes until leeks turn translucent.
2.Now, add in the milk, broth mix and microwave uncovered for 4 minutes on medium 50%.
3.Stir in the potato flakes and microwave again for 5 minutes on medium 50%. Stir once every 2 minutes. The soup thickens by this time.
SERVING
4. Serve hot.
