Directions

In a large heavy saucepan, heat the olive oil over moderate heat for 1 minute; add the onion and cook, uncovered, until soft about 5 minutes.
Mix in the garlic, potatoes, and water; cover, raise the heat to moderately high, and bring to a boil about 4 minutes.
Adjust the heat so that the mixture bubbles gently and cook, uncovered, for 20 minutes or until tender.
Using a potato masher, carefully mash the potatoes right in the saucepan.
Mix in the kale and pepper, cover, and simmer for 15 minutes or until the kale is just tender.
Ladle into soup bowls.
