Potato And Egg Salad Recipe
First of all let me thank my neighbor for sharing this excellent Potato And Egg Salad recipe. I tried this recipe for Potato And Egg Salad the other day and was totally bowled over. I will prepare this Potato And Egg Salad as Side Dish for a get-together I am soon going to host. It is always prepared with a focus on Vegetable. Ingredients
8 oz. potatoes
1 Tbs. wine vinegar
2 eggs, hard boiled
2 Tbs. olive oil
1/2 tsp. salt
1 Tbs. chopped onion
2 Tbs. chopped gherkins
Pinch of pepper
Directions
New potatoes or waxy old ones are the best.
Scrub and boil them in their jackets.
Peel and cool.
Shell the eggs and separate the whites and yolks.
Mash the yolks in a basin and add the salt and pepper, vinegar, and oil.
Beat well and add the onion and gherkins.
Slice the potatoes or cut in small cubes.
Add the chopped whites and pour over the dressing.
Mix well.
