Potato and Cheese Burgers Recipe
Ingredients
| Red potatoes | 750 Gram, unpeeled | |
| Mild cheddar cheese | 200 Gram, grated | |
| Red onion | 1 , finely chopped | |
| Butter | 25 Gram | |
| Ground black pepper | 1 To taste | |
| Salt | To Taste |
Directions
1. The evening before, put the potatoes in a large pan of water and bring to the boil. Boil for about 20 minutes until the potatoes are just cooked but firm. Drain and cool.
2. Peel the potatoes and grate them into a bowl. Stir in the grated cheese, chopped onion and seasoning. With wet hands shape into 6 rounds then press down with 2 fingers to form into burgers. Neaten up the edges.
3. Set a heavy-based frying pan over a medium heat and melt half the butter. Cook the burgers in 2 batches, using the remaining butter, until golden brown, which will take about 5 minutes, turning once. Set aside to cool.
4. Enjoy 4 burgers for dinner, served with lightly smoked trout fillets and cucumber slices, and pack the remaining burgers into an airtight container. Keep in the refrigerator for up to 3 days.
