Potato and Black Olive Salad Recipe
Ingredients
| 8 medium-sized potatoes | ||
| Black olives | 1 1/2 Cup (16 tbs), pitted | |
| Parsley | 2 Tablespoon, finely chopped | |
| Extra virgin olive oil | 1/2 Cup (16 tbs) (Dressing) | |
| Balsamic vinegar | 3 Tablespoon (Dressing) | |
| 1 tspsalt | ||
| 1/2 tsp freshly grated black pepper | ||
| 14 tsp castor sugar | ||
Directions
GETTING READY
1) Boil the potatoes with their jackets on and peel while still hot enough to handle.
2) Cut into cubes and place into a bowl.
MAKING
3) Combine all the ingredients for dressing and whisk till well amalgamated.
4) Sprinkle dressing over the potatoes and toss till well coated.
5) Cool and mix in the remaining ingredients and chill.

6) Serve chilled.
