Ingredients

 4 c potatoes, cooked and diced
 Cucumber1 Cup (16 tbs), diced
 Chives1/4 Cup (16 tbs), minced
 Celery seed1/2 Tablespoon
 Sea salt1/2 Tablespoon
 1/2 c cashew butter
 1 c Tofu mayonnaise
 Paprika1 Tablespoon
 1/4 c cider vinegar or pickle juice
 3 hard cooked eggs
 Pickles

Directions

Combine potatoes, cucumbers, chives, celery seed, salt, and diced egg whites.
Mash yolks and mix with the cashew butter, mayonnaise, paprika, and vinegar.
Pour over the potato mixture and chill.
Garnish with sliced pickles.
