Potage Parmentier Recipe
Potage Parmentier is a french vegetable soup made with leeks and potatoes as the key ingredients. Cooked in milk and chicken stock, the Potage Parmentier is seasoned to taste and is simple yet flavorful.
Ingredients
| Butter 50g/5oz | ||
| Vegetable oil | 2 Tablespoon | |
| Large onion, finely chopped 1 | ||
| Medium leeks, white parts only, thinly sliced 3 | ||
| Medium potatoes, finely chopped 6 | ||
| Chicken stock 900ml/1 1/2 pints | ||
| Milk 300 ml/10 floz | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Melt the butter with the oil in a large saucepan.
Add the onion and fry until it is soft.
Stir in the leeks and potatoes and cook, turning occasionally, until the potatoes are evenly browned.
Season with salt and pepper and pour over the stock and milk.
Bring to the boil, stirring constantly.
Reduce the heat to low, cover the pan and simmer for 20 to 25 minutes, or until the potatoes are very tender.
Pour the soup through a strainer into a bowl, using the back of a wooden spoon to rub the vegetables through.
Discard the pulp in the strainer.
Alternatively, puree the soup in a blender.
Return the soup to the saucepan and simmer for 5 minutes.
