Ingredients

 
Chuck or round of beef - 3 pounds
 
Fat - 1 tablespoon
 
Water - 1 cup
 
Red wine - 1 cup
 
Salt - 1 1/2 teaspoons
 
Peppercorns - 4
 
Potatoes - 6 medium
 
Carrots- 6 medium
 
Small onions - 6 to 8
 
Whole mushrooms - 1/2 pound, cleaned

Directions

MAKING
1. In a large heavy Dutch oven, heat the fat till smoking and add the beef to brown it on all sides.
2. Pour in the water, wine, salt and peppercorns and stir well
3. Cover tightly and set on top of slow coals and simmer about 2 hours.
4. Add the rest of the ingredients and simmer about 45 minutes or until vegetables are tender.

SERVING
5. Serve hot with toasted bread and sour cream
