Directions

Preheat oven to 350° F.
Cut 6 slits, about 1 inch deep, into top of roast.
Combine herbs in a small bowl; add bacon slices to herb mixture and combine until well coated.
Roll up the bacon and stuff one slice into each slit.
Pour bourbon over all.
Place roast in pan, cover, and roast approximately 2 hours, or until meat is very tender.
