Pot Roast Meat Loaf Recipe
Ingredients
| Lean ground beef | 1 Pound | |
| Evaporated milk | 2/3 Cup (16 tbs) | |
| 1/3 c. fine dry bread crumbs | ||
| 1/4 c. catsup or chili sauce | ||
| Salt | 2 Teaspoon | |
| Worcestershire sauce | 2 Teaspoon | |
| Pepper | 1 | |
| Potatoes | 3 | |
| Onions | 3 | |
| Carrots | 3 | |
| Parsley flakes | 2 Teaspoon, dried | |
Directions
Mix the ground beef, milk, bread crumbs, catsup, 1 teaspoon salt, Worcestershire sauce and 1/4 teaspoon pepper in a mixing bowl.
Shape into a loaf and place in center of a 13 x 9 x 2-inch pan.
Peel potatoes and onions and slice 1/4 inch thick.
Scrape the carrots and cut in quarters.
Mix parsley flakes, 1 teaspoon salt and dash of pepper.
Place vegetables around meat loaf and sprinkle with salt mixture.
Cover tightly with foil.
Bake at 375 degrees for 1 hour or until vegetables are tender.
Uncover and bake for 10 minutes longer.
