1 possum
1 tablespoon chopped celery
2 onions, chopped
3 whole cloves
3 cloves garlic
3 whole allspice
1 tablespoon thyme
2 tablespoons salt
3 bay leaves
1/8 teaspoon red pepper
1 tablespoon fresh parsley, chopped
6 large sweet potatoes, boiled,skinned, and sliced
Directions
Put the possum to boil in a pot of water containing all ingredients except the sweet potatoes.
Boil for 2 1/2 to 3 hours.
When the possum is tender, take it out and place it in a baking pan.
Surround it with the sliced sweet potatoes.
Brown the possum and potatoes on both sides in a 350° oven.
