Ingredients

 
2 tbsp (30 mL) butter
 
4 chicken breast halves
 
1 cup (250 mL) leeks, thinly sliced
 
2 French shallots, minced
 
1 bunch watercress or parsley, whole
 
1/3 cup (80 mL) port wine
 
2/3 cup (160 mL) chicken broth
 
2 egg yolks
 
3 tbsp (50 mL) cold water
 
Salt and pepper to taste

Directions

Place the butter in a microwave-safe baking dish and melt 1 minute at HIGH.
Add the leeks and shallots.
Stir well.
Microwave 4 minutes at MEDIUM-HIGH, stirring halfway through cooking.
Add the watercress or parsley, the port and chicken broth.
Microwave uncovered 3 minutes at HIGH.
Stir.
Roll up each half breast like a sausage.
Salt and pepper to taste.
Place the chicken in the port sauce and baste.
Cover with lid or plastic wrap.
Microwave 18 minutes at MEDIUM.
Let stand 10 minutes.
Remove breasts to a hot serving plate.
Pour the hot sauce mixture into the processor or blender bowl.
Beat the egg yolks lightly with the cold water, add.
Cover and beat to obtain a creamy sauce.
Pour into a microwave-safe dish and microwave 2 minutes at HIGH, stirring well after 1 minute.
You will have a lovely green sauce.
Pour over the chicken breast.
Reheat 2 minutes at MEDIUM.
Serve.
