Portuguese Cod Recipe
Ingredients
4 cod steaks
5-6 slices bacon
1 large onion
1 green pepper
1 tablespoon oil
1 lb canned tomatoes
1 tablespoon concentrated tomato paste
1/2 teaspoon dried mixed herbs
salt and pepper
GARNISH
a large sprig of parsley
Directions
Broil the cod steaks and put them in a greased ovenproof dish.
Chop the bacon coarsely .
Chop the onion finely .
Chop the pepper coarsely .
Heat the oil in a pan and cook the bacon, onion and pepper for 5 minutes until soft and golden.
Add the tomatoes and their juice, the tomato paste, herbs, salt and pepper.
Cover and simmer for 10 minutes.
Pour over the cod and bake at 325°F for 20 minutes.
Chop the parsley finely and sprinkle on top just before serving.
