1/2 tablespoon active dry yeast
 
2 tablespoons warm water (105°-115°F)
 
1/4 cup milk
 
4 tablespoons unsalted butter
 
1/3 cup sugar
 
1/2 teaspoon salt
 
2 1/2-3 cups flour
 
2 eggs
 
1/2 teaspoon grated lemon peel
 
1/2 tablespoon lemon juice
 
1 uncooked egg

Directions

1 Dissolve yeast in warm water. Set aside for 5 minutes. Heat milk, butter, sugar, and salt to warm (105°-115°F).
2 Combine 2 cups flour, milk mixture, yeast mixture, eggs, lemon peel, and lemon juice. Mix thoroughly.
3 Add enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Set aside a ball of dough about 1 1/2 inches in diameter. Shape rest of dough into a round loaf, and place in greased 8-inch round cake pan.
6 Cover; let rise in warm place until almost double€”about 30€”45 minutes.
7 Place an uncooked egg in the middle of the loaf. (In Portugal, these eggs are not colored.) Press down gently to keep in place. Make 2 ropes about 9 inches long, and form a cross over egg.
8 Bake in a preheated 375°F oven about 45 minutes or until done. Cool on wire rack.
