Portuguese Kau Kau Recipe
Ingredients
2 cups red or pink beans
2 qts. boiling water
1 medium onion, sliced
1 linguica (Italian pepper sausage or chorizo sausage)
1 carrot, diced
1 turnip, diced
2 potatoes, diced
1 small cabbage, chopped
1 can tomato sauce
1 to 2 qts. water
3 tbs. salt
Directions
Wash beans, cover with boiling water and soak an hour or more.
Add onion and skinned sausage.
Cook until beans are tender (about 1 hour).
Add remaining ingredients and simmer another hour and a half.
