19 oz (540 ml) canned tomatoes, drained
 
2 zucchini, diced
 
1/2 tsp (2 ml) sugar
 
1/4 tsp (1 ml) basil
 
1/4 tsp (1 ml) pepper
 
1/4 tsp (1 ml) salt
 
1 lb (450 g) haddock fillet, cut into sticks
 
4 shallots, finely sliced
 
1/4 Cup (60 ml) chopped parsley
 
1/4 Cup (60 ml) oil
 
2 tbsp (30 ml) flour
 
1 tsp (5 ml) paprika
 
4 hard-boiled eggs, pressed through sieve

Directions

–  In a rectangular micro wave-safe dish, spread tomatoes and zucchini, sprinkle with sugar, basil, pepper, and salt, then place haddock sticks over mixture and set aside.
–  In a bowl, combine all other ingredients except hard-boiled eggs, pour mixture over fish sticks, and cover with a sheet of perforated plastic wrap.
–  Cook in microwave at HIGH 6 to 7 minutes, then let stand for 3 minutes and sprinkle with hard-boiled egg bits.
