Portuguese Chicken And Egg Recipe
Ingredients
| 4 slices buttered crusty bread | ||
| Thinly sliced, cold cooked chicken | ||
| 4 large 1/2 inch thick slices of tomato, drained | ||
| 2 hard-cooked eggs | ||
| Mayonnaise or salad dressing | ||
| Chopped parsley | ||
Directions
Cover the bread slices with overlapped slices of chicken.
Cut 1 1/2 inch circles out of tomato slices with a small cutter and place one slice on each sandwich.
Cut eggs in half crosswise and set a half egg on each tomato cutout.
Coat the edge of sandwiches with mayonnaise and sprinkle with parsley.
