Portuguese Bean Soup Recipe
Ingredients
| Red beans | 1 Cup (16 tbs), dried | |
| Water | 2 Quart | |
| Onions | 3 , sliced | |
| Garlic | 2 Clove (5gm), minced | |
| Bacon fat | 1/4 Cup (16 tbs) | |
| Potatoes | 6 , diced | |
| Bay leaves | 2 | |
| Ground allspice | 1 Teaspoon | |
| Tomato Paste | 1 Can (10oz) | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Put beans and water in kettle and bring to boil.
Boil for 2 minutes.
Remove from heat, and let stand for 1 hour.
Then bring again to boil, and simmer, covered, for 1 1/2 hours or until beans are tender.
Cook onions and garlic in bacon fat until lightly browned.
Add with remaining ingredients, except salt and pepper, to beans.
Simmer, covered, for 1 1/2 hours.
Season to taste.
