Portobello Mushroom Super Bowl Burger Recipe

 4 Portobello mushroom caps

 Garlic1 Teaspoon, minced (For the Marinade:)
 Pepper jack cheese slice4 (For the Marinade:)
 Mayonnaise1/2 Cup (16 tbs) (Garlic Aioli:)
 Roasted garlic2 Teaspoon, minced (Garlic Aioli:)
 4 Ciabatta rolls
 Lettuce
 Tomato
 Red onion
 Salt To Taste
 Pepper To Taste

Directions

Marinade the mushrooms: In a small bowl, combine olive oil, vinegar, basil, oregano, garlic, salt, and pepper. Place the mushrooms in a shallow container and pour the mixture over the mushrooms. Let the mushrooms stand at room temperature for about 8 minutes or so. Turn them over and marinate an additional 8 minutes.

Prepare the aioli: Combine mayonnaise and roasted garlic in a small bowl.

Next, grill the mushrooms over medium-high heat. Preheat the oven and then brush the grate with oil. Place the mushrooms on the grill and reserve the marinade for basting. Grill for 5 to 8 minutes on each side, or until tender, brushing frequently with marinade. During the last two minutes of grilling, top each mushroom with cheese.

Assemble the burger:
Split and toast the buns, then spread aioli on each bun. Next, assemble the burger on the bun, adding lettuce, tomato, and finally the Portobello with melted cheese.

Serves 4.
