Ingredients
3 tbsp (50 mL) butter
2 large onions, finely chopped
1 tbsp (15 mL) flour
4 cups (1mL) boiling water
Salt and pepper to taste
1/2 cup (125 mL) dry port wine
4 to 5 slices of bread, cut in fine strips
1 cup (250 mL) Gruyere or Parmesan cheese, grated
Directions
Place the butter in an 8-cup (2 L) microwave-safe bowl and melt 2 minutes at HIGH.
Add the onions, stir well.
Heat 5 minutes at HIGH.
Add the flour, mix well.
Add the boiling water, stir until well mixed.
Add salt and pepper.
Microwave 10 minutes at HIGH.
Add the port.
In a soup tureen or large bowl place half the bread strips, cover with the grated cheese and place the remaining strips of bread over the cheese.
Pour the hot soup over it all.
Let stand 1 or 2 minutes.
Serve.
