Port Wine Mousse Recipe

Ingredients
1 envelope unflavored gelatin
3 eggs, separated
4 tablespoons sugar
Grated rind of 3 oranges
3 ounces port (or other dessert wine)
6 ounces heavy cream
3 ounces shelled walnuts
Directions
1. Place gelatin in a bowl with cold water.
2. Beat egg yolks and sugar for about 5 minutes and add wine and grated orange rind.
3. Melt the gelatin in 1/4 cup water over low heat and let cool.
4. Meanwhile beat the egg whites and the cream separately to stiff peaks. Stir the gelatin into the egg, sugar, and wine mixture. Then stir in the cream and the egg whites. Stir gently till everything is mixed.
5. Pour mousse in a bowl or individual cups and top with shelled walnuts. Chill till mousse is firm, about 3 hours.
