Port Sauce Recipe
Ingredients
| Port | 1 Cup (16 tbs) | |
| Juice and peel of 1 medium orange, peel cut into matchstick lengths | ||
| 3 tablespoons plum jelly | ||
| Bay leaf | 1 Medium | |
| Coriander | 1/8 Teaspoon | |
| 3 cups drippings | ||
| Salt | To Taste | |
| Cornstarch | 2 Teaspoon | |
Directions
Heat port, orange juice and peel in skillet.
Reduce to half.
Add jelly, bay leaf, coriander and drippings.
Reduce again.
Remove bay leaf.
Salt to taste.
Thicken with cold cornstarch that has been mixed with a little port.
Reduce to half.
