 Chicken breast1 Pound
 Vegetable oil1 Tablespoon

 Cucumber1/2
 Satay sauce - 4-6 tablespoons
 Garlic1 Teaspoon, finley minced (For the marinade:)
 Shallots1 Tablespoon, finley minced (For the marinade:)
 Light soy sauce2 Tablespoon (For the marinade:)
 Caster sugar1 Tablespoon (For the marinade:)
 Coriander powder1 Tablespoon (For the marinade:)
 Lemon juice or rice vinegar - 1 tablespoon

Directions

GETTING READY
1. To prepare the meat cut it into 1" (2.5 cm) cubes and marinate in the marinade for at least 1 hour.
2. Soak the bamboo satay sticks in water for about 30 minutes.

MAKING
3. Thread 3-4 meat cubes onto each bamboo satay stick.
4. Brush each satay with a little oil and cook over a charcoal barbecue or under a hot grill for 6-8 minutes, turning frequently.

SERVING
5. Serve hot with onion, cucumber and satay sauce.
