3 large pork tenderloins
 
4 ounces sliced cooked ham
 
1/2 pound puff pastry
 
1 egg, beaten
 
Stuffing:
 
2 tablespoons butter
 
1 medium-sized onion, chopped
 
1/4 pound mushrooms, sliced
 
1 teaspoon chopped parsley
 
1 teaspoon chopped sage
 
2 to 3 teaspoons bread crumbs
 
4 ounces ham, chopped
 
1 egg, beaten
 
Watercress, crabapples for garnish

Directions

The day ahead; Split tenderloins and trim, then flatten.
To prepare stuffing: In a frying pan, melt butter and gently cook onions for 2 minutes.
Add mushrooms and herbs.
Cover; cook for 5 to 7 minutes; remove from heat.
Add bread crumbs and ham.
Turn into a bowl to cool.
Bind with the beaten egg.
Divide stuffing in half.
Make 2 layers of stuffing between 3 tenderloins.
Truss.
Bake at 350degree F for approximately 1 hour.
Baste frequently.
The day of serving: Remove string and wrap tenderloin with 4 ounces of sliced ham.
Roll out puff pastry and wrap fillet and ham.
Brush with beaten egg.
Bake at 350°F for 30 minutes, until well browned.
